The pruning: William Fèvre focuses on quality.
From the end of November, we concentrate on pruning at William Fèvre. The vineyards which are the least exposed to frost are pruned at once. The other ones are pre-pruned while waiting for the end of the winter so as to be definitely pruned in March. The method which is most practiced in Chablis is an alternative to the Guyot pruning with the selection of two fruiting canes carrying six eyes (buds) and one spur (short branch) which will serve as a basis for the next year.
This technique is still practiced at William Fèvre on part of the estate. However for the plantings out and the new plantings we now prefer to use the simple Guyot pruning, with one fruiting cane and one spur. This more selective pruning means lower yields and improves the quality of the grapes. It’s with this search for perfection in mind that William Fèvre manages all steps of its viticulture
