The 2013 vintage is biginning to take shape
From their bringing in the winery the grapes were pressed then the alcoholic fermentation stage converted the juice into wine. During this 3 weeks tricky period a part of the crop was transferred into stainless steel vats and the other part was poured into oak casks. Instead of using new oak casks the wine-estate has employed aged barrels so as to enhance the subtle nuances of varied Chablis terroirs they spring from.
From now on the wines have finished their fermentation and are starting to give a clear picture of the vintage style. They show a nice balance, some fruit and a satisfying acidity which indicate some great 2013 Chablis that are made of an utmost purity which is peculiar to William Fèvre.
